benjamin Holland


Ben Holland grew up between Chicago and New Buffalo, Michigan, where his family's roots date back to the 1950s. His passion for New Buffalo flourished over the years, leading him to host events and restaurant takeovers that brought hundreds to the area. After earning an economics degree from Southern Methodist University and establishing a successful career in investments, Ben's love for hospitality persisted. In 2008, inspired by his summers in New Buffalo, Ben envisioned opening a restaurant in the community. 15 years later, he secured a prime location at 207 N Whittaker Street, with a direct connection to Chicago via the Amtrak line. Seeking the right chef to realize his vision, Ben partnered with James Galbraith, known for his successful restaurants Houndstooth and Anemel in Benton Harbor. Together, they opened PostBoy in late 2024, offering chef-driven fare, craft cocktails, live music, and a large outdoor patio, enhancing the vibrant atmosphere of New Buffalo. The restaurant has thrived as a regional destination and community hub, standing as a love letter to the magic of Michigan’s Harbor Country and the promise of its culinary future.

James Galbraith

James Galbraith, a Benton Harbor native, began his culinary career as a dishwasher and busboy, working his way onto the line by age 19. He developed his foundation in Southwest Michigan kitchens, most notably at Bread+Bar under the mentorship of Tim and Pat Foley. In 2016, he partnered with his sister, Chef Cheyenne Galbraith, to help lead Bistro on the Boulevard in St. Joe as sous chef, while also staging at acclaimed Chicago restaurants including Blackbird, Boka, Elske, and Big Kids.
In 2019, James and Cheyenne opened Houndstooth in Benton Harbor. James later opened Anemel in 2022. With nearly 20 years of experience, he partnered with Ben Holland to open PostBoy in New Buffalo, a 10,000-square-foot New American restaurant blending Harbor Country charm with globally influenced Midwestern cuisine and Danish retro aesthetics.
PostBoy opened in November 2024 and has since welcomed over 100,000 guests. In 2025, James was recognized on Nation’s Restaurant News’ Power List for his role in elevating local makers, nourishing the community, and creating a dining experience that is personable, refined, and distinctly Michigan.

Executive Chef/Owner 

DONTE SHAW

With over 20 years of professional culinary experience, Chef Donte Shaw is a Midwest native born and raised in Gary, Indiana, and proudly self-taught. He entered the culinary world through hands-on experience and learning from cookbooks rather than traditional culinary school, becoming serious about his career at 19. His journey has taken him from steakhouses and country clubs to acclaimed kitchens, including time at the three-Michelin-star restaurant Alinea. After years working in Indiana, he forged his own path by launching Bantam Diner and later opening Bantam Chicken and Seafood in South Bend during the pandemic in 2020, which operated successfully for two and a half years. He later spent time in Florida volunteering with the Edible Education nonprofit and serving as Executive Sous Chef at 1921, before returning to the Midwest in early 2024 as Executive Chef at Farrand. Beyond the kitchen, Chef Shaw is deeply committed to community connection, mentorship, and inspiring the next generation, bringing grit, adaptability, and a deep respect for the craft to every culinary environment.

KRYSTIN REUBER

Krystin Reuber is the Bar Director at PostBoy New Buffalo, known for building thoughtful, welcoming beverage programs rooted in creativity and consistency. Most recognized for her time at Brewster’s Italian Café, she led a successful bar program that blended modern techniques with approachable, comfort-driven flavors.
Krystin has collaborated with local favorites including False Front, Tomcat Tavern, and Iron Fish Distillery, creating tasting menus and spirit-forward experiences. Her approach pairs unique ingredients with a sense of home, always prioritizing hospitality, team development, and memorable guest experiences.

BAR DIRECTOR

SAMANTHA NOBLE

Samantha Noble is the Events Director at PostBoy, bringing a strong background in restaurant leadership, events, and hospitality operations. With experience spanning high-volume restaurants, private events, and distillery venues, Samantha is known for her organization, attention to detail, and guest-first approach.
Previously, she held management roles at Journeyman Distillery and 600 Kitchen & Bar, where she oversaw front-of-house teams, financial operations, private events, scheduling, and staff training. With a foundation in both service and creative work, Samantha combines operational excellence with a thoughtful, welcoming approach to hospitality.
