PostBoy is a chef-driven indoor/outdoor restaurant and gathering place in the heart of New Buffalo, Michigan—where Midwestern warmth meets a global point of view. Founded by Ben Holland and Chef James Galbraith in late 2024, PostBoy brings a fresh, modern take on regional classics, shaped by James’ 20+ years in kitchens and time spent cooking around the world.
We’re rooted in community, seasonality, and the people who make this place home. That means collaborating with nearly 40 local farmers, artisans, wineries, and breweries, and creating space for neighbors to gather—around the table and beyond it. As Southwest Michigan’s dining scene continues to grow, PostBoy stands as both a destination and a neighborhood spot, proudly stewarding the region’s food, farms, and future.
Our name comes from a true local legend. In 1834, Captain Whittaker set sail from Buffalo, NY, aboard a schooner called Post Boy, one of the Great Lakes mail ships. A violent storm forced him east, wrecking the ship just south of where we stand today. Struck by the beauty of the area, the captain and crew stayed the winter—and never left—founding what became New Buffalo.
Today, PostBoy sits on Whittaker Street as a nod to that spirit of adventure. Here’s to good food, good neighbors, and smooth sailing ahead.
